You might surprise yourself. I moved from Windows to Linux, and while much of it is hard, especially on the desktop, squid is not hard.
I think the most important concern for you trying out squid on Linux would be getting the right distribution. Ubuntu has 'server' support, and Red Hat sell really good Support contracts, and CentOS has a strong community, and is basically the same software as Red Hat.
You should be able to select squid as an optional package during the installation, so it should work right out of the box.
