They are defined in squid.conf, eg on my system;
adam@rix ~ $ grep cache.log /etc/squid/squid.conf
# TAG: cache_log
cache_log /var/log/squid/cache.log
# cache.log log file is written with stdio functions, and as such
# message to cache.log. You can allow responses from unknown
# If set to "warn" then a warning will be emitted in cache.log
adam@rix ~ $
