Will it impact performance of the cache server if there are many acls? What is your recommendation if my cache server has 100+ domains and I want each domain has its own log? Should I modify the code to do that?

Here is one way:
acl abc dstdomain www.abc.com
acl xyz dstdomain www.xyz.com
access_log /path/to/xyz.log squid xyz
access_log none xyz
access_log /path/to/abc.log squid abc
access_log none abc
access_log /path/to/access.log squid
