What you easily can do is to hide the version number. To do this make
your own error pages with %s inside a HTML comment, preventing it from
being displayed.
However, fully hiding the version number of a lot harder and requires
editing the source.
Note: The version number is shown in many places, not only error page
signatures.. You also have the Server: HTTP header on generated replies,
and ftp and gopher listing signatures.
