Generally yes.
Two drives can sustain a significantly higher request rate than a single
drive.

Building for more than about 7 days of cache is mostly a waste of
resources.
You should size the amount of drives in relation to the request rate you
need to sustain, and the total size of your cache to around 7 days or as
much as you can afford to spend on memory..
Note: there is a bunch of other issues when you start going above ca
1.5GB of memory if you are using a 32bit CPU.
