I know webmin can set it up, I havn't done it myself but maybe get it to do
it and look at the .conf

addresses.

I want to log every IP, but not the IP 192.168.1.1 (in the access.log).
Don't know exactly if it's possible, anyway you could look at the log files
with
cat access.log | grep -v 192.168.1.1
