I use SNMP and plot it with rrdtool.

Squid keeps quite detailed statistics on how much traffic is sent to
each peer, status of the peers and so on, accessible via the SNMP
interface.

You can also get a lot of interesting statistics by log processing.

What kind of statistics do you want?
