Calamaris is the first to fiddle with:

I would suggest Seafood, of course, if your log files are largish:

        http://www.cache.dfn.de/DFN-Cache/Development/Seafood/

]-user stats

client stats are offered by seafood.

]-cache stats and performance issues

hourly overview over TCP/UDP traffic and Parent, sibling, direct traffic.
daily statistics in greater depth over various items (tcp and udp status
sums, neighbour fetches, mime types, hierarchy level, etc.).

]-performance stats

Please define "performance". Post-mortem performance from logfile
processing isn't that thrilling, you might rather watch (monitor) your
squid via various means with MRTG.

]-site stats

Seafood offers domain based and AS based stats.
